This is a popular South-Indian style chicken curry made with tangy Gongura or Sorrel Leaves. It is an intensely tangy and spicy flavor. It tastes best with steaming hot white rice.

  1. Add sesame oil to a pan set on medium heat
  2. You can use normal oil if you don’t have sesame oil
  3. Add cumin seeds, mustard seeds, cinnamon sticks, dry red chilli (break them into pieces and add them), and curry leaves
  4. Stir fry for 30 seconds
  5. Add onions and half a teaspoon of salt
  6. Stir fry for approximately two minutes till the onions turn translucent
  7. Add garlic, add ginger and stir fry for one minute
  8. Add the Gongura leaves
  9. Stir fry for approximately 4 to 5 minutes. The leaves will turn brown in color. Keep stirring till the leaves turn into a sticky pasty consistency
  10. Add the chicken
  11. Add turmeric powder, cumin powder, coriander powder, black pepper powder, kashmiri red chili powder and mix well
  12. Add 1 cup of water and mix well
  13. Cover and cook till the chicken is fully cooked through. This will take approximately 12 to 15 minutes
  14. Once the chicken is tender, turn up the heat and cook for 5 to 7 minutes till the gravy reduces
  15. Add more salt if needed
  16. Add garam masala powder
  17. Mix well
