Description

Koraishutir Kochuri is an addictive Bengali dish. Deep fried puffed bread filled with a savory pea paste.

Instructions

    Making the green peas filling

  1. You can take fresh or frozen peas for this recipe
  2. Add the peas, ginger, and green chillies  in a grinder jar and grind to a fine paste. You will need to add some water while grinding so that the paste is absolutely fine
  3. Grind the fennel seeds to a powder
  4. Set a pan on medium heat and add oil and ghee
  5. Add Hing, the peas paste, fennel seed powder and salt to taste.
  6. Stir fry till the paste dries up and you are able to make a little ball with your fingers and doesn’t stick to your fingers
  7. Set the paste aside 
  8. You can either use the paste immediately or store it in the fridge to use later
  9. Making the kochuris

  10. Take all purpose purpose flour in a big bowl
  11. Add salt and oil (add one tbsp. at a time) and mix. Add enough oil so that when you make a fist with the flour it holds its shape.
  12. Add warm water (little at a time) and make a dough. Add some ghee to your hand and knead the dough 
  13. Keep the dough covered for 30 min
  14. Divide the dough in 4
  15. Stretch each part and make into 6 dough balls (6×4 dough balls in total)
  16. Roll the dough and fill it with the pea filling (refer to the video below)
  17. Fry the kochuri in hot oil till it puffs up and is golden brown on both sides
