Instructions

  1. Make a paste of bell pepper, green chillies, Kasuri Methi and coriander leaves
    Set aside
  2. Set a pot on medium heat and add oil (preferably coconut oil)
  3. Add cumin seeds and cinnamon stick
  4. Add chopped onion with some salt to taste
  5. Stir fry the onion till it turns translucent (~2 min)
  6. Add crushed garlic and stir fry for another minute
  7. Add spinach leaves and place the lid on for 1 minute
  8. Stir fry till the spinach leaves have all wilted
  9. Add the bell pepper/coriander paste
  10. Cover and simmer for 5 minutes
  11. Add coconut milk
  12. Add garam masala powder
  13. Add salt to taste
  14. Let the gravy simmer for 3-5 minutes
  15. Add black pepper powder
  16. Turn off the heat and add lime zest
  17. Add some lime juice (to taste)
