Delicious Bengali style cabbage curry made without onion or garlic
How to make Bengali cabbage curry-Badhakopir Ghonto
Description
This is a delicious cabbage curry recipe made in Bengali style. Also called Badhakopir Ghonto or tarkari. It is a niramish recipe meaning, its made without any onion and garlic. It tastes best with khichuri or luchi.

- In a bowl mix together turmeric powder, cumin powder and red chilli powder. Add 3-4 tbsp. of water, make a paste and set it aside
- Crush the ginger into a coarse paste and set it aside
- Make a powder of cinnamon sticks, cardamoms and cloves. You can either make a powder in a grinder jar or use a mortar and pestle. If you use a mortar and pestle you can discard the cardamom peels in the end.
- Set a large wide pot on medium heat and add any neutral cooking oil and mustard oil
You can also cook in pure mustard oil or only with neutral cooking oil. I like a mixture of both oils - Add potatoes and fry them till they are golden brown in color
- Set the potatoes aside
- To the same oil add cumin seeds, dried red chillies and bay leaf
- Once the seeds start to splutter add the masala paste
- Stir fry the masala paste for ~30 sec or till the water evaporates
- Add the cabbage and potatoes along with salt and sugar (to taste)
- If you are using fresh peas you can add it now. If you have par boiled frozen peas you can add it at a later point
- Give everything a quick stir, lower the heat and place the lid on for ~5 min
- Stir once again to make sure that the cabbage isn’t burning and the potatoes are cooked through
- In case the potatoes are not cooked through, place the lid on for another 5 min
- Add frozen peas
- Give it a quick stir
- Add a tablespoon of ghee
- Add more salt and sugar if needed
- Turn up the heat and stir fry the cabbage till till turns darker brown in color
- Add garam masala powder
- Give it a stir
- Add half a tablespoon of ghee
- Stir and done!
