How to make Mexican rice/Spanish Rice

Flavorful and nutritious rice with spices, beans and cheese! Best part, its a one-pot meal!



  1. Add olive oil to a pan set on medium heat
  2. Add onions and stir fry till the onions are translucent (~ one minute)
  3. Add garlic
  4. Stir for 30 seconds
  5. Add the pre-soaked rice
  6. Stir fry rice for 30 seconds
  7. Add cumin powder
  8. Add salt (1 teaspoon, or to taste)
  9. Add beans and corn and stir fry for 30 seconds
  10. Add smoked paprika, black pepper powder and mix well
  11. Add fresh tomato purée, fresh lime juice and half of the coriander leaves
  12. Mix
  13. Add chicken stock (you can use vegetable stock or water as well), add more salt if needed
  14. Place the lid on and let the rice cook for approximately 12 minutes
  15. When the rice is almost cooked, add the bell pepper pieces in
  16. Gently mix without breaking the rice grains
  17. Cover and cook till the rice is fully cooked (~ two more minutes)
  18. Once the rice is fully cooked garnish with the remaining coriander leaves and a tablespoon of Parmesan cheese powder
