Palak Paneer Recipe (with a twist)

Description

Traditionally the gravy is made from Spinach but I have incorporated Coriander leaves, Green Peas and Kasuri methi in it, which makes it healthier and much tastier! This recipe is the highlight of every dinner party I have and you’ll surely keep your friends guessing what ingredients went into it 😉

  1. Add 3 tablespoons of oil to a pan set on low heat
  2. Add spinach leaves and peas (I used frozen peas)
  3. Sprinkle half a teaspoon of salt and mix well
  4. Place the lid on and cook till all the spinach wilts (this will take approximately 2 minutes)
  5. Give it a mix, cover again, and let it cook for 2 more minutes
  6. Stir fry on low heat for approximately 2 minutes
  7. Transfer everything to a blender jar.
  8. To the same blender jar add coriander leaves, pour milk, add green chillies and blend it to a smooth paste
  9. Keep the paste aside
  10. To the same pan add approximately 2 tablespoons of oil
  11. Add cumin seeds and cinnamon sticks
  12. Once the cumin seeds splutter, add onions and half a teaspoon of salt
  13. Stir till the onions turn translucent (this will take approximately 2 minutes)
  14. Add crushed garlic and stir for approximately one minute
  15. Add tomatoes
  16. Mix well and place the lid on
  17. Cook for approximately 2 minutes till the tomatoes get soft and mushy
  18. Give it a quick stir and place the lid on once again
  19. Cook for 3 more minutes.The tomatoes should be totally soft by now
  20. Stir fry the mix for approximately 2 minutes
  21. Reduce the heat to low and add the spinach-pea paste
  22. Mix well, add salt to taste and fresh lime juice
  23. Add crushed Kasuri Methi. (you can crush the Kasuri Methi in between your palms)
  24. Add Garam masala, paneer pieces mix thoroughly
  25. Place the lid on and let it cook for approximately 2 minutes
  26. Give it a quick stir
  27. Add heavy whipping cream and mix well
