How to make Bengali cabbage curry-Badhakopir Ghonto

Description

This is a delicious cabbage curry recipe made in Bengali style. Also called Badhakopir Ghonto or tarkari. It is a niramish recipe meaning, its made without any onion and garlic. It tastes best with khichuri or luchi.

    Prep

  1. In a bowl mix together turmeric powder, cumin powder and red chilli powder. Add 3-4 tbsp. of water, make a paste and set it aside
  2. Crush the ginger into a coarse paste and set it aside
  3. Make a powder of cinnamon sticks, cardamoms and cloves. You can either make a powder in a grinder jar or use a mortar and pestle. If you use a mortar and pestle you can discard the cardamom peels in the end.
  4. Set a large wide pot on medium heat and add any neutral cooking oil and mustard oil
    You can also cook in pure mustard oil or only with neutral cooking oil. I like a mixture of both oils
  5. Add potatoes and fry them till they are golden brown in color
  6. Set the potatoes aside
  7. To the same oil add cumin seeds, dried red chillies and bay leaf
  8. Once the seeds start to splutter add the masala paste 
  9. Stir fry the masala paste for ~30 sec or till the water evaporates 
  10. Add the cabbage and potatoes along with salt and sugar (to taste)
  11. If you are using fresh peas you can add it now. If you have par boiled frozen peas you can add it at a later point
  12. Give everything a quick stir, lower the heat and place the lid on for ~5 min
  13. Stir once again to make sure that the cabbage isn’t burning and the potatoes are cooked through
  14. In case the potatoes are not cooked through, place the lid on for another 5 min
  15. Add frozen peas 
  16. Give it a quick stir
  17. Add a tablespoon of ghee
  18. Add more salt and sugar if needed
  19. Turn up the heat and stir fry the cabbage till till turns darker brown in color
  20. Add garam masala powder
  21. Give it a stir
  22. Add half a tablespoon of ghee 
  23. Stir and done!
