Soft, fluffy, creamy, and cheesy baked potatoes with a salty crispy skin! What better comfort food in winter than piping hot baked potatoes! Right?! I will also share the recipe of a topping that is finger licking good 🙂 
We will make these delicious baked potatoes in an air fryer

  1. Combine mayonnaise, pepper powder, salt, spring onion greens, coriander stems, lime juice, pickled jalapeños, garlic powder  and parmesan cheese
  2. Baking the potatoes

  3. Use potatoes that are nice and starchy like Russett potatoes
  4. Scrub the potatoes well and dry them with a towel
  5. Poke holes in the potato with a fork 
  6. Brush olive oil in the potatoes and sprinkle some salt and pepper
  7. Bake in air fryer at 350 degrees Fahrenheit or 180 degrees Celsius
  8. The bake time would depend on the size of the potatoes. The potatoes I used were ~ 5×3 inches in size and took ~45 min to bake
  9. Make a slit on the potato and fluff it up inside
  10. Put in some cheese pieces inside the potato and let it melt by shutting the potato for a minute
  11. Add some of the topping
  12. Garnish with spring onion greens and red chilli flakes
