    Guacamole

  1. De-seed 2 avocados, cut them into small cubes and scoop them out in a bowl.
  2. Add chopped onions (3 tbsp.), chopped tomatoes (2 tbsp.), crushed garlic (1 tsp.), salt (1 tsp.), black pepper powder (1/2 tsp.), fresh lime juice (2 tsp.) and mix well
  3. Add chopped pickled jalapeños (1 tbsp.) or any other pepper if you like it hot
  4. Quesadillas

  5. For the quesadillas I used 10 inch flour tortillas and mixed shredded cheese. You can substitute with corn tortillas and any cheese of your choice.
  6. I fried the quesadillas with butter three minutes on each side on medium heat. You can substitute with oil or mayonnaise if you like.
  7. The quantities of the ingredients are enough for one 10 inch quesadilla.
  8. Bell Pepper, Mushrooms and Onion Quesadilla

  9. Add 2 tablespoons of sliced onions and sauté until they are slightly translucent (for approximately two minutes)
  10. Add 1/4 teaspoon of crushed garlic
  11. Give it a quick stir
  12. Add sliced mushroom (1/2 cup)
  13. Add sliced bell pepper (1/4 cup)
  14. Sprinkle some salt and pepper
  15. Stir till the mushrooms are soft (for approximately three minutes)
  16. Black Beans, Tomato and Corn Quesadilla

  17. Add 1 tablespoon of butter to a pan set on medium heat
  18. Add sliced onion (1/4 cup) and stir fry till they turn translucent (~1 minute)
  19. Add crushed garlic (1/4 teaspoon) and sauté for one minute
  20. Add corn (1/4 cup)
  21. Add chopped tomatoes (2 tablespoons)
  22. Add pre-boiled or canned black beans (1/2 cup)
  23. Give it a quick stir
  24. Sprinkle salt (to taste)
  25. Sprinkle smoked paprika powder (to taste)
  26. Add cumin powder (1/4 teaspoon)
  27. Squeeze some lime juice
  28. Mix well
  29. Eggplant and Basil Pesto Quesadilla

  30. Add 2 tablespoons of olive oil to a pan set on medium heat
  31. Add chopped eggplant (one cup)
  32. Sprinkle some black pepper powder
  33. Stir fry until the eggplant pieces turn slightly crisp (~5 minutes)
  34. Add 2 tablespoons of basil pesto to the fried eggplant
  35. Mix well
  36. Tomato and Mint Quesadilla

  37. Add 1 tablespoon of butter to a pan set on medium heat
  38. Add 1 tablespoon of chopped mint
  39. Give it a quick stir
  40. Add chopped tomatoes (1/2 cup)
  41. Sprinkle salt and pepper (to taste)
  42. Sauté for one minute
  43. Kale and Black beans Quesadilla

  44. Add 1 tablespoon of butter to a pan set on medium heat
  45. Add crushed garlic (1/4 teaspoon) and sauté for 1 minute
  46. Add 1/2 cup of Kale and stir fry for 30 seconds
  47. Add 1/2 cup of pre-boiled or canned black beans
  48. Give it a quick stir
  49. Sprinkle some pepper
  50. Squeeze lime (to taste)
  51. Add 1 tablespoon of parmesan cheese powder
  52. Mix well
  53. Spinach, Mushroom and Onion Quesadilla

  54. Add 1 tablespoon of butter to a pan set on medium heat
  55. Add 1/2 cup of sliced onions and stir till they turn translucent (~2 minutes)

  83. Mash the garbanzo beans partially
  84. Broccoli and Hash Browns Quesadilla

  85. Add 2 tablespoons of butter to a pan set on medium heat
  86. Add 1 cup of grated potato
  87. Stir fry till soft (~5 minutes)
  88. Add 1 cup of broccoli florets (cut in small pieces)
  89. Stir fry till the broccoli soft (~3 minutes)
  90. Sprinkle salt and pepper (to taste)
  91. Mix well
  92. Add 1/2 teaspoons of low sodium soy sauce
  93. Stir fry for 1 minute
  94. Chilli Corn and Jalapeno Quesadilla

  95. Add 1 tablespoon of butter to a pan set on medium heat
  96. Add 1/4 cup corn
  97. Sprinkle salt and pepper (to taste)
  98. Give it a quick stir
  99. Sprinkle red chili flakes (to taste)
  100. Add 1 tablespoon of chopped cilantro and 1 tablespoon of chopped pickled jalapeños
