Description

Light and Airy Eggless Oats Pancakes! Healthy and nutritious breakfast! I’m going to show you sweet pancakes that’s drizzled with honey and also a savory version that’s topped with cheese. Who said pancakes should only be sweet right! To make your breakfast prep even faster I’ll also show you how to make a dry pancake mix!

    Sweet Pancakes 

  1. Add one cup of rolled oats or instant oats to a blender jar
  2. Add one teaspoon of sugar, a pinch of salt, half a teaspoon of vanilla extract, half a teaspoon of baking soda, 3/4 cup of milk (the milk can be right out of the fridge you don’t have to warm it)
  3. Blend that to a smooth paste 
  4. Rest this for 10 minutes to get to the right consistency 
  5. Set a pan on medium heat, add ~2 tbsp. of the pancake mix, add a little oil (or melted butter is even better) and let it turn golden brown on both sides. It should take approximately two minutes per side
  6. One cup of oats should give you approximately 5-6, 3.5 inch wide pancakes 
  7. What if you don’t have baking soda and vinegar at home? don’t worry, try this one! 

  8. Add 1 cup of oats to the blender jar, 1 teaspoon of sugar, a pinch of salt, half a teaspoon of vanilla extract, 3/4 cup of milk and instead of baking soda and vinegar we’ll add Eno! (an ingredient that we almost always have at home right!)
  9. For one cup of oats add a quarter teaspoon of eno 
  10. Blend that to a smooth paste and let that rest for 10 minutes
  11. Set a pan on medium heat, add ~2 tbsp. of the pancake mix, add a little oil (or melted butter is even better) and let it turn golden brown on both sides. It should take approximately two minutes per side 
  12. Make a high stack of pancakes and drizzle honey or or maple syrup or slather with nutella!
  13. In case you are bored of sweet pancakes let’s make a Cheesy version!

  14. Add one cup of oats in a blender jar, add a quarter teaspoon of salt, some pepper (to taste), half a teaspoon of baking soda, 3/4 cup of milk and half a teaspoon of vinegar (or you can do the Eno version without the baking soda and vinegar) 
  15. Blend till smooth and let it rest for 10 minutes 
  16. Set a pan on medium heat, add ~2 tbsp. of the pancake mix, add a little oil (or melted butter is even better) and let it turn golden brown on both sides. It should take approximately two minutes per side 
  17. Once both sides are golden brown, cover it with your favorite cheese then turn off the heat and place the lid on for one minute or till the cheese melts!
  18. Dry Pancake Mix

  19. Fill your blender jar with as much oats as possible. Make sure to measure the number of cups. Add half a teaspoon of baking soda or 1/4 teaspoon of eno per cup of oats. Grind this to a fine powder, you can store this mix in an airtight container. 
  20. Add the rest of the ingredients (follow the charts for sweet or cheese pancakes)Oats PancakesOats Pancakes
  21. Once all the ingredients are added, mix well and let that rest for 10 minutes and make your pancakes as mentioned above.

Notes

  • Some of you may wonder whether you can use baking powder instead of baking soda. The answer is yes, if you’re using baking powder, for one cup of oats use one teaspoon of baking powder and there is no need to add vinegar. But baking soda and vinegar makes your pancakes more fluffy than using baking powder alone
  • Sometimes when the pancake mix is sitting around for a while it can get a little thick see it’s taking a lot longer to pour out so in this case what you do is either spread it with a spoon or you can thin out the batter with a little bit milk or water, both of them work.
