Description

This rice flour Banana Bread is the quickest banana bread you will ever make! Add everything in a blender or food processor jar, mix, and bake! This rice cake is gluten free, dairy free, vegan and eggless too! The banana bread is soft, moist and delicious!

  1. Preheat your oven at 300°F or 150°C
  2. Grease a bread pan (7.75 x 3.75 x 2.5 Inch) with some oil (on the bottom and on the sides) and please a parchment paper. 
    You can also use a 6 inch circular cake pan instead
  3. Dust the chopped nuts and raisins with some rice flour and set it aside
  4. In a blender jar or food processor jar add ripe bananas, sugar, oil, salt, baking powder, baking soda, white vinegar or lime juice, cinnamon powder, grated nutmeg or nutmeg powder and rice flour
  5. Blend well until it forms a smooth paste (rice flour has no gluten so you can blend for a long time without worrying that the cake will become dense
  6. Mix in the chopped nuts and raisins (that we dusted with flour) into the batter
  7. Pour the batter in the cake pan, even though the surface with a spatula, and tap it a couple of times to get rid of air bubbles
  8. Garnish with some more chopped nuts all raisins if you wish
  9. Bake for 50 to 60 minutes until a toothpick inserted into the center of the cake comes out clean
  10. Let the bread cool down completely before slicing it
