Description

Macher Matha diye badhakopi is a Bengali delicacy. This absolutely mouth watering preparation can be made with any freshwater fish head and cabbage. The cabbage is cooked till it has a melt in the mouth texture and is combined with aromatic spices and crisp fish head pieces. This recipe is surely a keeper!

Instructions

Clean the fish heads thoroughly and coat with salt and turmeric powder

Add 3 tbsp. Mustard oil to a pot set on high heat
Add fish head pieces and fry till crisp
Set the fish aside

Reduce heat to medium
Add cumin seeds, cinnamon stick, green cardamoms, cloves and 1 bay leaf
Add turmeric powder, salt (to taste), 1/2 tsp. sugar and ginger paste

Give it a quick stir
Add garlic cloves and stir. (You don’t have to brown the garlic)
Add cumin powder and red chilli powder. You can splash some water in the pot if it’s too hot and you think that the masalas could burn

Give it a quick stir
Add the fried fish head
Add cabbage along with some salt (to taste)

Place the lid on for 2 min so that cabbage wilts a little and it’s easier to stir it
Mix the cabbage with the fish
Place the lid on till the cabbage becomes soft. Stir the curry every 5 min so it doesn’t burn

If the cabbage doesn’t ooze out water, you can sprinkle some water so that cabbage turns nice and soft
Check for salt and sugar
Add ghee and keep stir frying the cabbage till it looks oily and easily glides on the surface of the pot

While stirring you can break the fish head into smaller pieces so the taste of the cabbage enhances
Add garam masala powder and mix
