How to make instant Khubani ka Meetha Trifle

My Valentine’s Day Dessert for this year is the famous Hyderabadi dessert called Khubani Ka Meetha (sweet jam made of dried apricots). This delightful preparation pairs well with heavy cream or vanilla ice cream and nuts. Here, we are doing to make a Khubani ka Meetha trifle: vanilla sponge cake layer topped with Khubani ka meetha, whipped cream and nuts! This dessert is surely going to win hearts 🙂
I am sharing an instant recipe for Khubani ka meetha, that you can make in your instant pot or pressure cooker. The Vanilla Sponge cake will also be ready in minutes in your microwave oven!

Instructions
- Roughly chop 1 cup of dried apricots and pour it in a pressure cooker
- Add enough water to just cover the apricot pieces (approximately 2 cups)
- Pressure cook for 15-20 min or until the apricots turn soft on low/medium heat
- Turn off the heat and mash the apricots
- Turn the heat back to low, add 1 cup of sugar (or to taste) and stir till the sugar dissolves
- In a large bowl whisk together yogurt and baking soda till the yogurt looks frothy
- Add cooking oil, sugar, vanilla extract, salt, and whisk well
- Place a strainer over the bowl and to that add all purpose flour and baking powder. Sift this in. We are sifting this so that the cake turns out airy and there are no clumps
- Combine the dry ingredients into the wet ingredients using the cut and fold method.
- Once the dry ingredients are incorporated, give it a quick brief whisk to get a nice and smooth batter
- Grease a microwave safe bowl and pour the batter in
- Microwave on high for 3-4 min, till the cake is done (the cake is done, when the center of the cake is no longer pasty)
- Add 3/4 cup of chilled heavy whipping cream to a bowl
- To this, add sugar and vanilla extract
- Whip till stiff peaks form
- Spread a thick layer of Khubani ka meetha
- Add whipped cream over it and garnish with almonds and pistachios (Refer to the video recipe, if you want to see how I decorated with the whipped cream :))

Notes
- If you want a more decadent, moist, and rich cake layer, poke some holes in it (with a fork or tooth pick) and pour in some heavy cream before adding the khubani ka meetha layer!
