This is one of the easiest and most delicious eggless mango cake recipe that you can make without an oven! Make this in a pan in 15 min!

      Making the cake batter

    1. We will first combine all the wet ingredients in a bowl
      Add yogurt, mango purée (made from fresh mangoes or from store bought mango purée), neutral cooking oil, vanilla extract, sugar, white vinegar, a pinch of salt and whisk till smooth
    2. You can skip the white vinegar if the yogurt is sour
    3. Add all purpose flour and baking powder. 
    4. Fold the dry ingredients using the cut and fold method
    5. Give the batter a quick brief whisk so the batter is smooth
    6. Cooking the cake

    7. Use a heavy bottom non stick pan for cooking the cake
    8. I used a 7 inch pan here. You could also use a 6 inch pan
    9. Grease the bottom and sides of the pan with any neutral oil
    10. Pour the batter and spread it out evenly with a spatula 
    11. Place a lid on (cover any vent on the lid)
    12. Turn on the heat to the lowest possible temperature 
    13. Let the cake cook till the surface downy look wet anymore. It should take 15-20 min
    14. Check if a toothpick inserted in the center comes out clean
    15. Let the cake cool down completely
    16. Icing

    17. While you make the icing place the cake in the refrigerator 
    18. Add icing sugar and vanilla extract to chilled heavy whipping cream
    19. Whip the cream in a chilled bowl 
    20. Whip till stiff peaks form
    21. Decorate the cake as you like! (or refer to the video)
    22. Garnish with lots of mango pieces!
