Instructions
- Peel three raw bananas and cut them in disk like shapes with a thickness of around half a centimeter
- Make sure to place the raw banana pieces in water while cutting to prevent them from browning due to oxidation
- Now drain the water and to this add half a teaspoon of turmeric powder, 2 teaspoons of coriander powder, 1 teaspoon of normal red chili powder, 2 teaspoons of kashmiri red chilli powder, half a teaspoon of black pepper powder and salt to taste
- Mix thoroughly
- Set a pan on medium heat and add three tablespoons of sesame oil. If you don’t have sesame oil you can use either normal cooking oil or even coconut oil
- Add half a teaspoon of mustard seeds, half a teaspoon of cumin seeds, two dried red chilies, one teaspoon of black gram or urad dal, 10 to 12 curry leaves and some hing or asafoetida powder
- Stir fry for 10 to 15 seconds
- Once the seeds start to splutter add 1 tablespoon of ginger-garlic paste.
- Saute these for around 30 seconds and then add in the raw banana pieces
- Mix the pieces well with the ginger garlic paste and the other spices and try to spread out the pieces as much as you can on your pan
- Sprinkle around 2 tablespoons of water and place the lid on let this cook on low heat for around 5 minutes
- We want to make sure that the pieces haven’t stuck to the bottom of the pan and we also want to check if the pieces are completely cooked through
- If they don‘t look like they are cooked through yet, add a little more water and place the lid on once again
- Add salt to taste
- Sprinkle another tablespoon of sesame oil and fry the pieces till the masalas are nicely toasted and the plantain pieces have a beautiful coating
- Keep stir frying the pieces for around 10 to 15 minutes on medium heat till the pieces have a nice dark golden brown color
- Let’s finish up with a squeeze of fresh lime juice for some extra kick
