Quesadillas are easy, healthy, and hassle free lunch box ideas. Here I share 4 different veggie quesadilla recipes that you can make with leftover whole wheat rotis!

Ingredients

    Instructions

      Aloo Matar (Potato-Peas) Quesadilla

    1. Set a pan on medium heat and add one tablespoon of ghee or clarified butter
    2. Add 2 teaspoons of crushed coriander seeds, one teaspoon of crushed ginger + green chillies and stir fry for 30 sec
    3. Add 1 cup of boiled potatoes (chopped) and half a cup of frozen green peas
    4. Stir fry for 2 min or until the potatoes brown slightly
    5. Garnish with some chopped coriander leaves
    6. Mexican flavored Quesadilla

    7. Set a pan on medium heat and add 1 tbsp. of cooking oil
    8. Add half a tsp. of crushed garlic and one small onion (finely chopped). Stir fry until the onion turns translucent. This should approximately take a minute.
    9. Add half a cup of chopped bell peppers, half a cup of boiled black beans or kidney beans, one small chopped tomato and stir fry for 2 min
    10. Add quarter tsp. of cumin powder and a generous amount of smoked paprika powder
    11. Add salt to taste and give it a quick stir
    12. Squeeze some fresh lime juice
    13. Pizza flavored Quesadilla

    14. Set a pan on medium heat and add 2 tbsp. of olive oil
    15. Add half a tsp. of crushed garlic and one small onion (finely chopped). Stir fry until the onion turns translucent. This should approximately take a minute.
    16. Add a quarter cup of chopped bell peppers, a quarter cup of chopped mushroom, a quarter cup of sweet corn, one small chopped tomato and stir fry for 2 min
    17. Add salt and pepper to taste
    18. Add dried basil leaves and dried oregano
    19. Add chopped olives and give it a quick stir
    20. Spinach-Mushroom Quesadilla

    21. Set a pan on medium heat and add some cooking oil along with 1 tbsp. of butter
    22. Add half a tsp. of crushed garlic and one small onion (sliced thin). Stir fry until the onion turns translucent. This should approximately take a minute.
    23. Add half a cup of chopped mushrooms and 1 cup of chopped spinach leaves
    24. Add salt and pepper to taste
    25. Stir fry for approximately 3 min or until the spinach leaves have wilted
    26. Making the quesadillas

    27. All quesadillas were made with whole wheat roti, amul cheese and fried in butter for 2 min on either side, until they turn golden brown and crisp (Refer to the video below for a demonstration)
