How to make Mexican rice/Spanish Rice
Description
Flavorful and nutritious rice with spices, beans and cheese! Best part, its a one-pot meal!
Ingredients
Instructions
- Add olive oil to a pan set on medium heat
- Add onions and stir fry till the onions are translucent (~ one minute)
- Add garlic
- Stir for 30 seconds
- Add the pre-soaked rice
- Stir fry rice for 30 seconds
- Add cumin powder
- Add salt (1 teaspoon, or to taste)
- Add beans and corn and stir fry for 30 seconds
- Add smoked paprika, black pepper powder and mix well
- Add fresh tomato purée, fresh lime juice and half of the coriander leaves
- Mix
- Add chicken stock (you can use vegetable stock or water as well), add more salt if needed
- Place the lid on and let the rice cook for approximately 12 minutes
- When the rice is almost cooked, add the bell pepper pieces in
- Gently mix without breaking the rice grains
- Cover and cook till the rice is fully cooked (~ two more minutes)
- Once the rice is fully cooked garnish with the remaining coriander leaves and a tablespoon of Parmesan cheese powder
