How to make Lemon Rice

Lemon Rice is a flavorful rice most popular in southern India. Pre-cooked rice is tossed with lime juice, nuts, and other spices and ends up tasting vibrant and delicious

- Cook rice in excess water and drain the water so the rice turns out nice and fluffy. Let the rice cool down
- Add 3 tbsp. Oil to a pan set on medium heat
- Add mustard seeds, cumin seeds, black gram, bengal gram, peanuts, and cashew nuts
- Stir fry till the cashew nuts turn golden brown or peanuts shells start to crack
- Add dried red chillies, green chillies and curry leaves
- Give it a quick stir
- Add lime juice, Hing, crushed ginger, salt and turmeric powder
- Let the lime juice simmer for a minute
- Add precooked rice and mix well
- Add more salt or lime juice if needed
- Add some curry leaves (cut in small pieces) for extra flavor
- Add chopped coriander leaves and ghee
