How to make Koraishutir Kochuri-Bengali Peas Kachori

Koraishutir Kochuri is an addictive Bengali dish. Deep fried puffed bread filled with a savory pea paste.

Instructions
- You can take fresh or frozen peas for this recipe
- Add the peas, ginger, and green chillies in a grinder jar and grind to a fine paste. You will need to add some water while grinding so that the paste is absolutely fine
- Grind the fennel seeds to a powder
- Set a pan on medium heat and add oil and ghee
- Add Hing, the peas paste, fennel seed powder and salt to taste.
- Stir fry till the paste dries up and you are able to make a little ball with your fingers and doesn’t stick to your fingers
- Set the paste aside
- You can either use the paste immediately or store it in the fridge to use later
- Take all purpose purpose flour in a big bowl
- Add salt and oil (add one tbsp. at a time) and mix. Add enough oil so that when you make a fist with the flour it holds its shape.
- Add warm water (little at a time) and make a dough. Add some ghee to your hand and knead the dough
- Keep the dough covered for 30 min
- Divide the dough in 4
- Stretch each part and make into 6 dough balls (6×4 dough balls in total)
- Roll the dough and fill it with the pea filling (refer to the video below)
- Fry the kochuri in hot oil till it puffs up and is golden brown on both sides
