How to make chocolate oatmeal cookies-eggless and gluten-free
Description
These chocolate cookies are healthy and delicious! They are eggless, gluten-free, crisp on the outside and soft and chewy inside. Perfect healthy cookies for your kids snack time
Ingredients

- To a food processor jar add rolled oats, cornstarch, baking powder, salt, white granulated sugar, cocoa powder, instant coffee powder, and grind to a fine powder
- Add vanilla extract, 4 tablespoons of melted butter and 4 tablespoons (or as required) of milk or any dairy-free milk substitute or water and mix until the dough comes together and is able to hold its shape
- Make cookie dough balls using a 2 tablespoon measure. Preheat your oven at 350 degrees Fahrenheit or 180 degrees Celsius
- Place the cookie dough balls on a sheet pan. Space out the balls so the cookies have room to expand
- Bake for 15-18 min. The cookies should be firm on the surface but soft when pressed down. Soft in the center and at the back

Notes
- If you prefer softer cookies you can substitute white granulated sugar with brown sugar
- If you want the cookies to be crisp on the outside and soft on the inside make sure to take the cookies out of the oven after 15 to 18 minutes of baking. The cookies crisp up as they cool down
- Don’t bake the cookies for too long, if not they’re going to turn rock hard when they cool down
