Ingredients
Instructions
- Add 2 cups of boiled potatoes (cut in small cubes) to a big bowl
- Add 2 teaspoons of extra-virgin olive oil to it
- Add half a teaspoon of salt and mix thoroughly
- Add four hard-boiled eggs (cut in small cubes)
- Mix
- Add 1 tablespoon finely chopped red onion
- 1 tablespoon finely chopped pickled jalapeños
- Add 1 tablespoon of chives (finely chopped)
- Add half a teaspoon of salt and half a teaspoon of powdered mustard (or more, if you prefer a sharper mustard taste)
- Add half a teaspoon of black pepper powder and give it a mix
- Add half a cup of thick unsweetened yogurt (like greek yogurt) and mix thoroughly
- Finish with a tablespoon of extra-virgin olive oil

Notes
- If you do not have pickled jalapeños you can soak pieces of green chillies in vinegar for 10 minutes and then add them
- You can use finely chopped spring onion greens instead of chives if you like
- You can add 1 tablespoon of store-bought mustard sauce instead of powdered mustard as well
- You can have this with any bread. My personal favorite, English muffins!!
