Pesto Pasta with mixed nuts

No pine nuts at home. No problem! This pesto recipe made with mixed nuts is finger licking good and so easy to make! And the best part, you can substitute basil with many other fresh herbs that you have and deliciousness is guaranteed!
Ingredients
Instructions
- Add the following to a grinder jar
- Basil leaves, roasted mixed nuts, garlic cloves, pepper powder, half a teaspoon of salt, lime juice, 1 tablespoon of Parmesan cheese powder, 3 tablespoons of extra-virgin olive oil
- Grind this till it reaches a slightly coarse texture
- Add 2 teaspoons of salt to a pot of boiling water and bring it to a boil
- Add the pasta
- Boil the pasta for approximately seven minutes till it is 90% done (al dente)
- Take out some of the pasta water in a bowl
- In a pan add the rest of the olive oil and put in a cup of cherry tomatoes
- Let them sweat a little
- Sprinkle some salt on the tomatoes
- Add the pasta in
- Add approximately 2 tablespoons of the pasta water
- Give it a quick stir
- Turn off the heat and add the pesto
- Finish by add the rest of the parmesan cheese powder
