How to make moist chocolate cake

Instructions
- Pre-heat your oven to 150C or 300F
- You can use a 6,7, or 8 inch can pan for this recipe. Line with parchment paper and grease with oil on both sides of the parchment paper
- In a large bowl sift in all purpose flour, corn starch, cocoa powder, baking powder and baking soda
- Mix the dry ingredients
- Add salt, white and brown sugar. If you don’t have brown sugar, substitute with white sugar instead.
- Mix and set aside
- In a bowl take lukewarm milk and add white vinegar. Stir for 1-2 minutes and make sure the milk looks curdled. If the milk doesn’t look curdled, add some more vinegar
- Add eggs, vanilla extract and any neutral cooking oil
- Whisk well and set aside
- To boiling hot water in a cup add instant coffee. Stir well and set aside
- Add the milk/egg mixture to the dry ingredients and whisk till just combined on low speed
- Add coffee in hot water and whisk on low speed
- Pour into the cake pan and bake for 50-55 min
- The surface of the cake should feel spongy and a toothpick inserted into the center of the cake should come out clean
- Cool down the cake for 5 min and then de-mold it onto a wire rack
- Trim the surface of the cake and cut 2-3 layers. Refer to the video below on how to cut with a string
- Place the cake layers in the fridge for 10 min so they cool down completely before icing
- Add hot whole milk to chocolate morsels and butter
- Mix well till all the chocolate melts. If some of the chocolate has not melted, place the bowl in the microwave oven for 10 sec to melt it completely
- Cool down the chocolate ganache to room temperature so it gets to a beautiful velvety spreadable consistency
- Slather cake layers with chocolate ganache and enjoy!
