Muri ghonto is a delicious bengali recipe where fish head is cooked with rice and aromatic spices!

Ingredients

Instructions

  1. Soak rice in water for 20 min at least
  2. Clean the fish heads well. Coat well with salt and turmeric powder
  3. Set a pot on medium heat and add 5 tbsp. mustard oil
  4. Stir fry the potatoes till they are golden brown in color and set aside
  5. Fry the fish heads till they are crisp
  6. You may need to cover the fish heads if the oil splatters too much
  7. Break the fish heads into smaller pieces and make sure it’s fried well
  8. Take out the fried fish in another bowl
  9. To the same oil add cumin seeds, bay leaf and slit green chillies
  10. Stir fry for 30 sec
  11. Turn down the heat and add turmeric powder, cumin powder, red chilli powder, ginger paste and salt (to taste)
  12. Stir fry the masala for a few seconds
  13. Add potatoes and fish in and stir
  14. Drain off the water from the rice and add the rice in
  15. Add ghee and stir fry everything for 30 sec
  16. Add garlic cloves (whole or chopped) and add stir them in
  17. Add enough hot water to cook the rice through
  18. Taste the water, check for salt and add more if needed 
  19. Add sugar to taste
  20. Place the lid on, turn down the heat and let the rice and potatoes cook through
  21. Add more hot water to let the rice cook fully (if needed)
  22. Add garam masala powder
  23. Stir well
