Description

This is my grandma’s dum gobi recipe that has a unique and delicious taste. No onion and garlic added but the depth of flavor is amazing!

  1. Cut the cauliflower in large florets
  2. Soak the florets in hot water for 5 min to get rid of dirt or worms
  3. Drain the water and set the cauliflower aside
  4. Add oil to a pot set on medium heat. (Use a heavy bottomed pot for this recipe)
  5. Add Hing, bay leaves, cinnamon sticks, cardamoms, cloves, salt (to taste) and sugar
  6. Give it a quick stir
  7. Add the cauliflower florets along with powdered fennel seeds, red chilli powder, chopped tomatoes and crushed ginger 
  8. Stir the cauliflower 
  9. Reduce heat to low and place a lid on
  10. Let the cauliflower cook through. Stir the cauliflower every 10 min to make sure it doesn’t burn. If there is not enough juice in the pot you can add some hot water
  11. Once the cauliflower is cooked, add ghee and let the curry cook without the lid till the gravy looks oily
  12. Check for salt and sugar
  13. Add coriander leaves
