- Set a pan on medium/high heat.
- Add 1 tbsp. olive oil
- Stir fry the veggie toppings briefly
- Don’t cook the veggies till they turn too soft. They should be slightly crunchy.
- In a large bowl combine semolina, all purpose flour, salt, vinegar, 1 tbsp. oilve oil, baking soda, vinegar and water
- Mix well. The consistency of the dough should be pasty and wet
- I am using an 11 inch non stick pan. This pizza is 10 inches wide. If you are using a smaller pan, scale down the ingredients accordingly
- Add 1 tbsp. of olive oil and spread on the pan
- Do not turn on the heat as yet. Add the dough and spread into a circle.
- Place the lid on and cook the dough over low heat till it doesn’t feel wet on the surface any more. You can poke some holes with a tooth pick so the dough cooks faster
- Once the base is crisp and golden brown, flip the pizza base. You can use a chopping board or plate to flip the pizza. Before flipping the pizza add olive oil on the other side
- Spread pizza sauce
- Add cheese
- Add toppings, oregano and red chilli flakes
- Turn off the heat, place a lid on till the cheese melts
- Make sure that the base of the pizza is crisp
