- Make a paste of bell pepper, green chillies, Kasuri Methi and coriander leaves
Set aside - Set a pot on medium heat and add oil (preferably coconut oil)
- Add cumin seeds and cinnamon stick
- Add chopped onion with some salt to taste
- Stir fry the onion till it turns translucent (~2 min)
- Add crushed garlic and stir fry for another minute
- Add spinach leaves and place the lid on for 1 minute
- Stir fry till the spinach leaves have all wilted
- Add the bell pepper/coriander paste
- Cover and simmer for 5 minutes
- Add coconut milk
- Add garam masala powder
- Add salt to taste
- Let the gravy simmer for 3-5 minutes
- Add black pepper powder
- Turn off the heat and add lime zest
- Add some lime juice (to taste)
