How to make Keto Roti with Coconut Flour

This Keto roti is soft and pliable. It pairs well with lots of different Indian curries. They are made of coconut flour and psyllium husk. They are easy to make and can be frozen and heated up anytime.

  1. Take 1/2 cup or 70g of coconut flour 
  2. Add 2 tbsp. or 8g of psyllium husk
  3. Add 1/2 tsp. of salt
  4. Mix well
  5. Add 1.5 cups room temperature water. The quantity of water is 3 times that of coconut flour 
  6. Mix well
  7. Cover and let this rest for 20 min
  8. Add oil
  9. Knead into a dough
  10. Divide into 8 portions 
  11. Grease 2 silicone mats with oil 
  12. You can use parchment paper as well
  13. Roll into a ~7 inch circle
  14. You can cut it in a circular shape with a lid or cookie cutter  
  15. Heat a non stick pan to medium high heat
  16. Cook the roti for ~2 min per side or until golden brown spots appear 
  17. Freezing Rotis

  18. You can freeze the cooked rotis and heat it up later on a pan or a microwave (~15 sec high power)
  19. You can also freeze the rolled roti dough (raw). Make sure to layer the rolled dough with parchment paper in between, so they don’t stick to each other
