How to make Keto Roti with Coconut Flour
Description
This Keto roti is soft and pliable. It pairs well with lots of different Indian curries. They are made of coconut flour and psyllium husk. They are easy to make and can be frozen and heated up anytime.

Ingredients
Instructions
- Take 1/2 cup or 70g of coconut flour
- Add 2 tbsp. or 8g of psyllium husk
- Add 1/2 tsp. of salt
- Mix well
- Add 1.5 cups room temperature water. The quantity of water is 3 times that of coconut flour
- Mix well
- Cover and let this rest for 20 min
- Add oil
- Knead into a dough
- Divide into 8 portions
- Grease 2 silicone mats with oil
- You can use parchment paper as well
- Roll into a ~7 inch circle
- You can cut it in a circular shape with a lid or cookie cutter
- Heat a non stick pan to medium high heat
- Cook the roti for ~2 min per side or until golden brown spots appear
- You can freeze the cooked rotis and heat it up later on a pan or a microwave (~15 sec high power)
- You can also freeze the rolled roti dough (raw). Make sure to layer the rolled dough with parchment paper in between, so they don’t stick to each other
